Rainbow Veggie Bowls

Rainbow veggie bowls not only look good but taste amazing as well. Perfect for lunches or using up left overs in the fridge.

 

GLUTEN FREE | VEGAN | DAIRY FREE

 

Serves 1 or if you are feeling generous you can share with a friend

 

Approx. $5.50 AUD per batch - $5.50 AUD per serve

 

Equipment Required: 2 x small saucepans and round bowl

Ingredients

 

1 cup quinoa

1 vegetable stock cube

2 cups water

1/3 cup cos lettuce or rocket

1/3 cup grape tomatoes, sliced

1/3 cup purple cabbage, thinly sliced

1/3 cup avocado, diced

1/3 cup green beans

 

Quinoa Directions

 

1. Combine quinoa, water and vegetable stock in a saucepan on medium heat and bring to the boil.

2. Reduce to a low heat and continuously stir for 15 – 20 minutes.

3. Cool and set aside.

 

Green Beans Directions

 

1. While the quinoa is cooking, place green beans into a small saucepan on medium heat and bring to the boil.

2. Reduce to a low heat for 5 minutes.

3. Cool and set aside.

 

Constructing the Veggie Bowl

 

1. In a large round bowl add quinoa to a small section.

2. From there add each vegetable section at a time until you meet up around at the quinoa again.

3. Enjoy!

 

Tip – Drizzle with balsamic glaze for an extra flavour hit!
