Coconut Nectar Glazed Baby Carrots

This recipe is a great side dish to accompany any main meal or can be enjoyed on its own as a snack.

 

GLUTEN FREE | PALEO | VEGAN OPTION | DAIRY FREE

 

Serves 4

 

Approx. $4.68 AUD per batch - $1.17 AUD per serve

 

Equipment Required: Saucepan & fry pan 

Ingredients

 

500g baby carrots

2 tbsp. ghee or grass fed butter (for a vegan option, spray carrots with a little coconut oil)

2 tbsp. coconut nectar or maple syrup   

2 tbsp. pepitas

 

Directions

 

1. In a medium saucepan, bring water to a boil.

2. Add baby carrots and cook for 5 minutes until tender.

3. Drain carrots and place a fry pan on a medium heat.

4. Add ghee or grass fed butter to the pan along with coconut nectar or maple syrup and pepitas. Add in partially cooked carrots to the pan.

5. Cook for 3-4 minutes until the carrots are coated with a glaze of coconut nectar or maple syrup.

6. Season with a pinch of salt and serve warm!

7. Enjoy!

 

Tip – Best served as a side dish with freshly cooked salmon fillets or chicken breast!
