Pink Pitaya Smoothie Bowl

Pink pitaya or dragon fruit bowls are incredibly tasty and have an amazing deep hot pink colour. This amazing bowl of nourishing goodness is perfect for a summer breakfast or as a refreshing afternoon snack.

 

GLUTEN FREE | RAW | PALEO | VEGAN | DAIRY FREE

 

Serves 1 large bowl or 2 regular bowls

 

Approx. $5.97 AUD per bowl

 

Equipment Required: Food processor or blender

 

Base Ingredients

 

1 pink pitaya/dragon fruit flesh, frozen

1 banana, frozen

½ cup coconut water

¼ cup coconut yoghurt

1 apple, chopped and core removed

 

Garnish Ideas

 

Dragon fruit, sliced

Small handful of berries such as raspberries, blueberries or strawberries, halved

2 tbsp. toasted coconut chips

¼ cup coconut yoghurt

¼ cup granola

 

Directions

  1. Place base ingredients into your blender or food processor and combine until smooth.

  2. Pour base ingredients into a bowl and garnish with any of the above garnish ideas.

  3. Serve immediately and enjoy!
