Baked Eggs in Avocado
Simple, delicious, low carb and good for you!

Equipment Required: Baking tray + oven

Ingredients
1 large avocado, halved and seed removed
2 eggs
Shallots, sliced
Salt and pepper to season
Directions
1.Prepare a baking tray with baking paper.
2.Preheat the oven to 160°C or 320°F.
3.Place avocado halves on the baking tray and crack an egg into each hole where the seed was removed.
4.Season with salt and pepper and place in the oven for 10-15 minutes until the egg is cooked.
5.Garnish with sliced shallots and enjoy!
