Healthy Picnic Slice
Probably one of my favourite chocolate bars on the market, but with ingredients that don’t agree with my muffin top haha! Perfect for creating during the week for a cheeky 3pm snack or dessert after dinner!
GLUTEN FREE | RAW | VEGAN | DAIRY FREE

Ingredients
2/3 cup cashews & 1/3 cup cashews, crushed
2/3 cup desiccated coconut
1/3 cup almonds
4 tbsp. maple syrup
1 cup Medjool dates
1/4 cup peanut butter
Top with 1/3 cup cashews, crushed
Directions

Prepare a square baking tin with baking paper and set aside. You could also use a regular loaf tin as well to make thicker picnic slices.

Place 2/3 cup of cashews and remaining ingredients into a food processor.

Place mixture into the baking tin and spread evenly with a spatula.

Top with remaining 1/3 cup crushed cashews and place in the fridge to set for 2 hours.

Enjoy!
Optional - you can dip in chocolate or leave plain!
160g chocolate such as loving earth chocolate bar, melt and coat individual slices.
