Pomegranate & Strawberry Infused Coconut Water
To date, this is the best-infused coconut water I have ever had. The combination of sweet pomegranates and strawberries mixed with fresh coconut water is incredible! If you didn’t have any coconut water on hand simply mix with water for a refreshing thirst quencher. When you are finished, use the left over fruit in a smoothie or homemade ice blocks.

Serves 4 x 250ml glasses

Equipment Required: 1 liter glass Mason jar or carafe

Ingredients
1 x 250g punnet of strawberries, halved
¼ pomegranate arils
1 cup ice
750ml of fresh coconut water or water

With a sharp knife halve strawberries and place aside.

Now it is time to prepare the pomegranate. For the best and least damaging result, halve the fruit. Work with half at a time, scraping and pushing the seeds in a downward action in your kitchen sink with a bowl underneath. Please be aware the fruit may spray a little, so wear an apron or old clothing to minimise clothing stains.

Place strawberries, pomegranate arils and ice in a large jar or carafe.

Pour coconut water or water over the top and enjoy! (For more flavour, allow the mixture to infuse in the fridge for an hour or so or even overnight for a full burst of flavour).
Tip - If you have never used pomegranates before I suggest you wear an old shirt when cracking the arils out, I have learnt my lesson with white clothing and pomegranates.
